Francesco, how would you describe your kitchen in three words?
Curious, creative and passionate.
What inspires you most when cooking?
My childhood memories, I grew up with my grandparents’ cooking, and that had a deep impact on me. Cooking makes me happy because it allows me to express myself. But my greatest inspiration is the moment when I see someone really moved by one of our dishes. That glow in the eyes of the guests is what I cook for.
The dishes at Hide & Seek are considered surprising and light at the same time. What is your secret?
I think it’s the constant search for balance, between flavors and textures. I love combining techniques and flavors, always starting from the product itself. The most important thing for me is to respect the ingredients, to showcase them and to convey something to the guests. Something that goes beyond the food itself. This is exactly what makes Hide & Seek one of the most exciting casual dining restaurants on Lake Maggiore.
How would you describe your kitchen team?
It’s a real team, dynamic, well-coordinated and characterized by a high level of mutual trust, which is crucial in a group. Everyone has a clear role, but at the same time we all work together to constantly develop. Without them, none of what we put on the plate every day would be possible.
What is the most important element of a successful menu for you?
The harmony between the individual courses. A menu must be conceived as a journey, as an experience that accompanies the guest from start to finish and tells a story. For anyone looking for a special dinner in Ascona, it is precisely this attitude that makes the difference.
What advice would you give to young chefs?
Never forget why they started. Our profession is characterized by sacrifice and humility, and in difficult moments it is passion that keeps you going. This passion is the foundation of everything.
